Recently, many friends and family members have taken a keener
interest in what I eat, which is why I am writing this post. I have never asked others to change what they
eat at my request, but simply allow me to choose what I ingest. If they have questions, I answer them. Sometimes it feels like the answer is long,
boring, and even annoying. Maybe it is
also because I don’t always like to talk about why I initially made the switch,
even if it has made me happier in th... Continue reading ...

Buckwheat crepes (if traditional) should only contain buckwheat flour! Often they will have milk and eggs, but French grocery stores sell (huge) galletes au sarrasin with only buckwheat flour, salt, and water. Perfect for any meal, just add rattatouille, jam, or hummus to make it vegan. Soca/Farinata are like chickpea pizzas made in some parts of Italy and the south of France: http://oneperfectbite.blogspot.hk/2011/02/socca-farinata-blue-monday.html I have never made these, but they seem to ... Scot Jurek's Eat and Run

Eat and Run is a book about Scot Jurek's life, but more about ultramarathon running and eating vegan and natural. I did not spend too long on the parts about his races, although they are interesting for long distance runners. Usually, I don't like to read about running, just to do it. But some of the way he describes being able to deal with the pain of a race, or go 'with' the elements of nature rather than fight them is something that resonated with me. There are also many truths about r... Continue reading ...

My bro is feelin' it in Beantown! Here's something he sent me today. He promises to make it for me when I am in Boston for Christmas. Here's what he says: It's [his] own Thai lettuce wraps creation (no recipe!!).
Boston lettuce (it's better if you use hydroponic boston lettuce) (My comment: WHAT?! When did bro get all special with his lettuce?! I am impressed.)
Teriyaki chicken w/yellow peppers (or tofu/tempeh for vegan)
Bean threads (boiled) Cucumbers, carrots, bean sprouts, basil and appl... Continue reading ...
Caffeine update

I am starting to think that the 'hit' of morning caffeine is worth it on days when I want to get a lot of writing/research done. I think it may make me more tired the rest of the day--almost like a borrowed energy. There are studies that say it doesn't really help you concentrate, but I think there is something about philosophers/writers & sharp little espressos coming in pairs that is real. How do you feel about caffeine? My husband enjoying a cappuccino in Taipei. There is a lot of information out there about caffeine and weight loss, attention, anxiety, sleep, etc. There's also a lot of information about the antioxidants in green tea and coffee, but that we should be able to get in the decaf variety. Then some people say the decaf variety contains other toxins. The information can be confusing... There are also a lot of cultural reactions to how you enjoy your caffeine. What ... Food
Thanks, Emilie (Lyon, France) for the very easy dessert idea that is healthy enough to eat for breakfast! What she did: In a blender, mix equal parts (soy) yogurt & frozen fruit (ie melon, banana, strawberry). That's it! You can also add honey to sweeten or do some of the following combinations (in which I have included many 'Super Foods'): Almond milk, banana, spirulina, walnuts, dark chocolate. Freeze after blending. (Healthy 'Chunky Monkey') Coconut milk, decaf instant coffee, dark chocolate,... Continue reading ...

This is the way my husband and I typically eat. I first started because of health problems related to food intolerances. However, we also eat less meat and packaged food due to environmental concerns and a desire to control what we place in our bodies. We do eat fish that is wild and non-endangered as well as some animal products from organic family farms, which we support for the way in which they treat the animals and for the natural method of food production. See the LINKS page for som... Continue reading ...
